There's a few and they change all the time, but the one that consistently makes the top five is Brazil. It's directed by Terry Gilliam from Monty Python, and it's a weird and wonderful blend of fantasy and reality, in the same way as Delicatessen or The City Of Lost Children. It also has a lot to say about where the industrial age is leading us, about man's growing inhumanity to man, and an ending that just kicks you in the gut every time.
This isn't to say I never watch fluff - The Princess Bride is another all-time favourite, as is Truly Madly Deeply, which makes me cry like a baby every time I see it - but the fluff is generally the movie equivalent of popcorn to me. It's light, it's tasty, but it doesn't fully satisfy. Doesn't mean I don't like it - you should see me with popcorn! ;)
