Actually, since I was typing this out for Raph, I figured I might as well stick it up somewhere where it will be a Force For Good. *chuckles*

Most of you will want to move along at this point. ;)
Spinach and Cheese Pie.
Ingredients:
One medium bunch of spinach/silver beet (if using silver beet, trim off the stalks)
300 grams ricotta or fetta cheese.
250 grams tasty cheese (grated).
4 eggs.
10 sheets of filo pastry.
Approximately one tablespoon of melted butter/margarine.

1) Pre-heat oven to 180 degrees C/ 350 degrees F.
2) Wash the spinach and chop finely. Melt a small amount of butter/margarine in a saucepan (with a lid) and steam spinach until just cooked. Drain and place in a large mixing bowl.
3) To the bowl add the cheeses and the eggs. Mix well.
4) Grease a medium size cake or pie tin and line with six sheets of filo pastry, brushing each individual sheet with melted butter/margarine.
5) Spoon cheese mix into the pan, and then top with the remaining sheets of filo pastry. Drizzle remaining melted butter/margarine over the top. Bake for 30 minutes, or until top is golden brown.
6) Once cooked, let stand for a few minutes to set and then serve.
